Half Shell Mussels
Ingredients:
1 onion, halved and thinly sliced
1/2 red bell pepper, sliced
1/2 green bell pepper, sliced
2 ripe beefsteak tomatoes
Chopped cilantro
Olive oil, salt, and pepper to taste
Step by Step:
In a pan, heat a drizzle of olive oil, add the onion and bell peppers, and let them sauté.
Add the sliced tomatoes.
Once the tomatoes are cooked and soft, add the mussels and cover with a lid to cook with steam for about 3-5 minutes.
Serve with a generous amount of chopped cilantro on top.
